Almond Butter Cookies
Chewy and moist, these cookies are a nutty twist on the classic chocolate chip cookie that everyone is sure to love!
- 1 1/2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup butter or margarine
- 3/4 cup smooth almond butter
- 1/2 cup sugar
- 1/2 cup brown sugar packed
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp almond extract
- 3/4 cup semi-sweet chocolate chips
Preheat oven to 350°.
In a medium bowl, whisk together flour, baking soda, and salt; set aside. In a large bowl, beat together butter, almond butter, sugar, and brown sugar until smooth. Beat in egg, vanilla, and almond extract until light and fluffy. On low speed, add flour mixture and beat just until dough forms. Stir in chocolate chips just until combined.
Scoop out 1 Tbsp of dough and shape into a ball. Place on baking sheet and press slightly.
Bake 6 minutes, then rotate pan and bake for 6 minutes more until cookies are set. Remove from oven and transfer to a wire rack to cool completely. Store in airtight container for up to 5 days.
