Buttery Coconut Squares

If you’re in the mood for a slice of the tropics, this coconut square recipe is full of flavour and coconut goodness. Keep the squares small, though, as each bite is rich and buttery!



Buttery Coconut Squares

Makes 3 dozen



  • 2 cups flour
  • 1 cup brown sugar packed
  • 1/2 tsp salt
  • 1 cup butter or margarine melted


  • 3 large eggs
  • 1 can sweetened condensed milk 14-oz.
  • 1/2 cup flour
  • 1/4 cup brown sugar packed
  • 1/4 cup butter or margarine melted
  • 3 tsp vanilla extract
  • 1/2 tsp salt
  • 4 cups flaked coconut divided



  1. Preheat oven to 350°. 

    Line a 13"x9" baking pan with parchment paper, letting ends extend up and over the sides, or grease well.

  2. In a large bowl, mix flour, brown sugar, and salt; stir in melted butter. Press onto bottom of prepared pan. 

    Bake 12-15 minutes or until light brown. Cool 10 minutes on a wire rack.


  1. Reduce oven settings to 325°.

    In a large bowl, whisk ingredients from eggs to salt until blended; stir in 3 cups of coconut. Pour over crust; sprinkle with remaining coconut. 

    Bake 25-30 minutes or until light golden brown. Cool in pan on a wire rack.

    Use parchment paper to remove from pan. Cut into bars or squares.
