Buttery Coconut Squares

Ingredients

Crust

  • 2 cups flour
  • 1 cup brown sugar packed
  • 1/2 tsp salt
  • 1 cup butter or margarine melted

Filling

  • 3 large eggs
  • 1 can sweetened condensed milk 14-oz.
  • 1/2 cup flour
  • 1/4 cup brown sugar packed
  • 1/4 cup butter or margarine melted
  • 3 tsp vanilla extract
  • 1/2 tsp salt
  • 4 cups flaked coconut divided

Instructions

Crust

  • Preheat oven to 350°. 
    Line a 13"x9" baking pan with parchment paper, letting ends extend up and over the sides, or grease well.
  • In a large bowl, mix flour, brown sugar, and salt; stir in melted butter. Press onto bottom of prepared pan. 
    Bake 12-15 minutes or until light brown. Cool 10 minutes on a wire rack.

Bars

  • Reduce oven settings to 325°.
    In a large bowl, whisk ingredients from eggs to salt until blended; stir in 3 cups of coconut. Pour over crust; sprinkle with remaining coconut. 
    Bake 25-30 minutes or until light golden brown. Cool in pan on a wire rack.
    Use parchment paper to remove from pan. Cut into bars or squares.
