Chocolate Chocolate Chip Muffins

Ingredients

  • 1 3/4 cups flour
  • 1/3 cup brown sugar
  • 1/4 cup dark, unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2/3 cup sour milk or buttermilk
  • 1/2 cup sour cream
  • 2 large eggs
  • 3 Tbsp butter or margarine melted
  • 3/4 cup semi-sweet chocolate chips

Instructions

  • Preheat oven to 400°. Grease a 12-cup muffin tray.
  • In a large bowl, stir together flour, brown sugar, cocoa powder, baking powder, baking soda, and salt.
  • In a medium bowl, whisk together buttermilk or sour milk, sour cream, eggs, and butter. Make a well in the flour mixture and add liquid to centre. Stir to somewhat combine ingredients, then add chocolate chips. Stir just until moistened (batter will be lumpy).
  • Spoon batter into prepared pans, filling 3/4 full. Bake 15-20 minutes until tops are firm. Cool on wire racks for a few minutes before removing from pan and allowing to fully cool, or serve warm.

Notes

To make sour milk, combine 2 tsp vinegar and enough milk to make 2/3 cup. Allow to sit for a few minutes, during which time the milk will curdle and take on a slightly sour taste.
Muffins can also be made in a mini muffin pan for bite-size treats!
