Toasted Walnut Chocolate Chip Cookies

Ingredients

  • 1 1/2 c walnuts chopped
  • 1 c butter or margarine softened
  • 1/2 c white sugar
  • 1 1/2 c brown sugar packed
  • 2 eggs
  • 1 Tbsp vanilla extract
  • 3 c flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp allspice
  • 1/4 tsp salt
  • 1 1/2 - 2 c semi-sweet chocolate chips

Instructions

  • Preheat oven to 350° F. 
    Spread out chopped walnuts on a baking sheet and bake until golden brown and lightly toasted, about 8-10 minutes. Allow to cool.
  • Use an electric mixer to cream together the butter and white and brown sugars until smooth. Add eggs one at a time, beating thoroughly after each addition. Add vanilla extract.
    In a medium bowl, combine the flour, baking soda, cinnamon, allspice, and salt. Whisk to combine; gradually add to wet ingredients, being careful not to over-mix.
  • Stir in chocolate chips and toasted walnuts. Drop or scoop cookie dough onto baking sheet and lightly flatten with the back of a spoon.
  • Bake for 12-14 minutes, or until lightly golden.

Notes

Baking time will vary by the size of the cookie.
Swap out semi-sweet with milk or white chocolate; switch up the walnuts with pecans or almonds.
