Preheat oven to 350° F. Spread out chopped walnuts on a baking sheet and bake until golden brown and lightly toasted, about 8-10 minutes. Allow to cool.
Use an electric mixer to cream together the butter and white and brown sugars until smooth. Add eggs one at a time, beating thoroughly after each addition. Add vanilla extract.In a medium bowl, combine the flour, baking soda, cinnamon, allspice, and salt. Whisk to combine; gradually add to wet ingredients, being careful not to over-mix.
Stir in chocolate chips and toasted walnuts. Drop or scoop cookie dough onto baking sheet and lightly flatten with the back of a spoon.
Bake for 12-14 minutes, or until lightly golden.

Baking time will vary by the size of the cookie.Swap out semi-sweet with milk or white chocolate; switch up the walnuts with pecans or almonds.
