Zucchini bread has a reputation for being healthy, but that doesn’t mean it has to be boring! This recipe gets amped up with the addition of toasted walnuts and chocolate chips! Feel free to switch in any type of nut for the walnuts, and try raisins if you’re looking for an alternative to the chocolate chips.
Not your average zucchini bread, this moist loaf gets an upgrade with the addition of toasted walnuts and chocolate chips!
- 2/3 cup butter or margarine melted
- 2 cups flour
- 2 1/2 tsp baking powder
- 1 tsp salt
- 1 cup sugar
- 1 large lemon grated
- 2 large eggs
- 2 tsp vanilla
- 2 1/2 cups zuccini (1 large, 2 medium) coarsely grated
- 3/4 cup walnuts chopped & toasted
- 3/4 cup semi-sweet chocolate chips
Preheat oven to 350°. Grease a 9"x5" loaf pan.
In a medium bowl, whisk together flour, baking powder, and salt.
In a large bowl, combine sugar and lemon zest and rub zest into sugar to flavour. Add eggs, melted butter, and vanilla and whisk until smooth.
Stir in zucchini, then flour mixture. Gently fold in walnuts and chocolate chips.
Scrape batter into prepared pan and bake for 55 - 60 minutes until a wooden toothpick inserted into the centre comes out clean.
Cool in pan on wire racks for 5 minutes. Remove loaf from pan and let cool completely on rack.
Keeps for up to 5 days if well-wrapped.
